Currently, if item is available on eBay.com, it will snipe using eBay.com.
If it's not available on eBay.com, it will snipe using eBay UK.

Unfortunately, you can't change this behavior for now. But this feature (changing the sniping site) will be available in the near future. There is a work going on in this direction.
